The first decision you need to make is which craft to start with. Meenakari (enamel work) is generally considered more accessible for beginners because it builds on skills like painting and colour theory. Kundan (stone setting) requires more physical precision from the start, as you are working with gold foils and precious stones. Most serious students eventually learn both.
